Phytosterols (also called plant sterols) occur naturally in plants. Plant sterols are fat-like compounds whose chemical structures are very similar to cholesterol. They are naturally present in everyday foods especially in vegetables, fruit, nuts, grains and cooking oils. And can also be found in wood-pulp. The most common plant sterols are sitosterol, campesterol and stigmasterol. They are white powders with mild, characteristic odor. They have applications in medicine and cosmetics and as a food additive taken to lower cholesterol.
Plant sterols are similar in structure to cholesterol and work by inhibiting the absorption of cholesterol in the small intestine. Cholesterol is absorbed in the small intestine at specific sites called micelles. When consumed, plant sterols compete with cholesterol to attach to these sites, effectively blocking the cholesterol and forcing it to exit the body unabsorbed. Extensive human clinical research has shown that plant sterols substantially can lower LDL (bad) cholesterol by 8 – 15%.
